Carol McCoskey, 62, went to be with the Lord on Monday, February 1, 2021. She was born on June 3, 1958 in Jasper, Texas to the late W.R. and Rose Martindale. Carol married the love of her life, David, on October 12, 1991. They have two children together, Christopher and Jennifer.
Carol graduated from Schulenburg High School and worked for the Weimar Independent School District for over 20 years. She retired from the school in June of 2020 and began working at Hubbard Funeral Home alongside her husband. Carol and her family had a very special role in Texas Funeral Directors Association as they put on the Service of Remembrance at the annual convention for 22 years.
Carol was the sweetest soul you would ever meet. She made friends with everyone she ever met. She was always smiling and her laugh was infectious. She was the most positive person and it showed. She was so proud of her husband and children in everything that they did.
A public visitation for Carol will be held on Sunday, February 7, 2021 from 1:00 p.m. until 2:00 p.m. at Hubbard Funeral Home. A Memorial Service will follow the visitation at 2:00 p.m. with Rev. Glen Schoeneberg officiating.
Carol is preceded in death by her parents, W.R. and Rose Martindale; her husband, David McCoskey; her daughter, Kelli McCoskey; her sister and brother-in-law, Ruth and Tom McCausland.
Carol is survived by her son, Christopher Gray and wife Nikki; daughter, Jennifer McCoskey and fiancé Justin Owens; brother, Keith Martindale and wife Lori; lifelong friends, Dr. Bill Rugeley and wife Ann, and numerous nieces and nephews.
In lieu of flowers, the family requests that memorial donations be made to the David and Carol McCoskey Memorial Christmas Family Fund at the Boys & Girls Clubs of Champion Valley.
